Flour + plant-based milk: Make a light batter that helps the breadcrumbs stick and keeps the florets tender.

INGREDIENTS
½ large head cauliflower, cut into florets
¼ cup flour
¼ tsp garlic powder
⅛ tsp crushed pepper
3 tbsp plant milk
½ cup breadcrumbs (optional)
½ cup buffalo sauce or hot sauce
1–4 tsp melted vegan butter or oil
INSTRUCTIONS
Preheat oven to 420°F.
In a large bowl, mix flour, plant milk, garlic powder, and crushed pepper to form a smooth batter.
Toss cauliflower florets in the batter, then coat each piece with breadcrumbs (if using).
Place on a parchment-lined baking sheet and bake for 25 minutes.
In a bowl, mix buffalo sauce with vegan butter (or oil). Toss the baked florets in the sauce, then return them to the baking sheet.
Bake for another 10-15 minutes, until crispy and saucy.
Serve with your favorite dip - I went with some dairy-free ranch 💛
NOTES/TIPS
For extra crunch, broil the bites for 2–3 minutes at the very end (watch closely!).
These reheat well in the oven at 375°F for 5–7 minutes; they stay crispy if you avoid the microwave.
